In this study we evaluate the antimicrobial activity of 131 Lactic Acid Bacteria (LAB) strains isolated from Guirra milk sheep on Salmonella strains using agar diffusion tests. Tests were carried out with and without the presence of LAB cells. Moreover, all LAB strains were identified by the API 50 CHL identification system. Different LAB inhibition profiles were found independently of the use of cells. Nineteen LAB strains exhibited antagonistic activity on Salmonella strains probably due to the presence of cells, cell components, competitive exclusion for nutrients or/and presence of lactic acid.
