摘要

In recent years much attention has been placed on the extraction of novel bioactive components from meat waste streams or processing by-products. During meat processing many waste 'fifth-quarter' by-products and low-value cuts of meat are produced. Many of i these by-products and low-value cuts are rich sources of protein and represent good ; candidate raw materials for the exploration of biologically active peptides. During meat ageing the enzymatic changes affect the protein structures increasing free amino acids and peptides through hydrolysis.
