摘要

The global rise in the popularity of shrimps and prawns has led to a significant amount of waste which finds limited commercial outlets or is dumped causing a pollution problem. The waste is a valuable potential source of proteins, pigments and the main shell component chitin. The process described here was develoed to stabilise waste in tropical climates and separate an aqueous protein fraction from a solid chitin fraction. Factors, Factors affecting the process are: choice of inoculum, aeration, mixing and species of shellfish used. The process is aimed at reducing the acid and alkali treatment for chitin recovery.
