HACCP is the EU-and North American-recognised system for the effective identification and control of safety hazards within the seafood supply chain. Increasingly, customers are concerned with "hazards" which may affect the quality of the product without necessarily affecting safety. Processors and the large food retail multipels, who source from them, rate adverse quality incidents as hazards to their business. The Irish and Canadian approach has been to identify good manufacturing practice control points at which quality aspects may be dealt with separately from safety hazards. The US system has extended the use of HACCP strategy to combat fraud and has a specific sanitation CCP section which effectively controls many of the quality "hazards".
