During the last few years equipment based on computer vision, as for examples equipment for cutting fillets, for shape, length and size grading and for quality grading, has been successfully installed in the harsh environment of the fish processing plants increasing the efficiency and productivity of the plants. Recently a new concept was introduced in a fish processing plant in Iceland where an intelligent portioning machine plays a central role in the process flow. The new concept not only replaces manual labour, but also selects with built in intelligence the most economical processing method in order to optimise the value of the finished product.
