Spawn Making and Strain Development: Challenges and Opportunities

In the past century, mushroom cultivation has evolved from a somewhat rudimentary, labor intensive process, to a system that relies heavily on modern mechanical inputs ranging from infrared thermometers to robot aided harvesting. A key component in the mushroom growing process is the preparation and delivery of the seed or starter culture, largely provided by spawn makers. While the science of spawn making has changed over the last 100 years with the introduction of grain spawn, bottle production and rotating autoclaves, the principle deliverable, sterilized grain colonized by the mushroom fungus, has not. As the industry continues to develop into a segmented and highly specialized industry, spawn makers are being asked to reevaluate their contribution to the commercial success of the business and must be prepared to face new challenges and be ready to take advantage of unique opportunities as the mushroom industry continues to evolve. This paper will discuss the nature of some of both the challenges and opportunities that spawn makers face today, including the use of recombinant DNA technology and molecular biology, intellectual property rights, materials costs and availability, strain development, new technologies and the potential for unintended consequences as these technologies develop.
