质构仪是一种评价食品品质的仪器,其测定的结果有较高的灵敏度和客观性。利用质构仪测试不同品牌市售乳制品变质前后硬度、内聚性、粘附性、弹性各项质构指标的变化,发现乳制品变质后质构指标均不同程度的下降,证明质构仪可以真实客观的评价乳制品的品质。%The texture analyzer is a kind of instrument to evaluate food quality , and the measurement results have higher sensitivty and objectivity. In this study , the texture analyzer test before and after different brands of dairy products market involves metamorphic hardness, cohesiveness, adhesive, the change of the elastic quality and structure index, indicated that the dairy metamorphic structure indexes of different level dropped. It was confirmed that the text analyzer can evaluate food quality objectively.
