本文介绍了食品原料与添加剂课程的教学改革和教学实践的体会.改革的主要内容是量化考核指标,提高考核难度,同时,教学中在堂上演示相关实验和播放事先拍好的实验录像,大大提升学生的感性认识.与食品添加剂企业合作,提供食品添加剂让有兴趣的学生进行课外研究,理论联系实际提高了学习效果.最后,主讲教师多参加相关法律法规培训学习,与本行业接轨.%This paper introduces the teaching reform and teaching practice of food ingredients and additives. The main content of reform is quantization assessment indicator, and improving the difficulty of examination. At the same time, performing related demonstration experiment and playing a experiment in advance in class can enhance students' perceptual knowledge. In cooperation with food additive enterprises, providing food additives for interested students to conduct after-school research can actually improve learning effect by theoretical contact. Finally, the teacher will participate in the training of relevant laws and regulations to connect with the industry.
