刺梨与无籽刺梨的果实特性及其主要营养成分差异

         

摘要

为提供贵州刺梨及无籽刺梨开发利用的参考,采用2,6-二氯酚靛酚染料滴定测定等方法,对贵州省植物园栽培的刺梨及无籽刺梨的果实特性和主要营养成分进行测定,并将测定结果与不同产地刺梨的主要营养成分进行对比分析。结果表明:成熟刺梨果实为黄色、扁球形,果形指数为0.70,单果重达11.03 g,是无籽刺梨的1.6倍,其果肉重量为9.88 g,占果重的89.57%,是无籽刺梨的1.5倍,刺梨的种子和萼片重量为1.12 g;无籽刺梨果实为黄褐色、卵圆形,果形指数为1.27,果肉占果重的98.11%。刺梨的维生素C含量较高,达2703.75 mg/100g,而无籽刺梨的VC含量远低于刺梨,为903 mg/100g;刺梨的 VE、SOD和水分的含量均高于无籽刺梨,而VB2、蛋白质和可溶性糖的含量则低于无籽刺梨。不同产地刺梨果实主要营养成分结构为VC>蛋白质>VE>VB2>SOD;贵州省植物园的刺梨果实在 VC、VE、可溶性糖和蛋白质含量均高于其他地方。%The characteristics and main nutrition components of R.roxburghii and R.sterilis fruits cultivated in Guizhou Botanical Garden were determined and compared with R.roxburghii fruits produced from other areas to provide a reference for development and utilization of R.roxburghii and R.sterilis in Guizhou.The fruit shape index of R.roxburghii fruits with yellow color and spheroid is 0.70.The single fruit and flesh weight of R.roxburghii fruit is 11.03 g and 9.88 g,1.6 times and 1.5times that of R. sterilis fruit respectively.The seed and sepal weight of R.roxburghii fruit is 1 .1 2 g.The fruit shape index and flesh weight of R.sterilis fruits with yellowish-brown color and oval is 1.27and 6.75 g.The Vc content of R.roxburghii and R.sterilis fruits is 2703.75 mg/100g and 903 mg/100g separately.The VB, SOD and water content of R.roxburghii fruits is higher than R.sterilis fruits but VB2 ,protein and soluble sugar content of R.roxburghii fruits both are lower than R.sterilis fruits.The main nutrition component structure of R.roxburghii fruits from different producing areas is VC>protein>VE>VB2>SOD and the VC ,VB ,soluble sugar and protein content of R.roxburghii fruits cultivated in Guizhou Botanical Garden is higher than that in other R.roxburghii producing areas.
