In this issue, we are looking at trends, trends, trends. The past year has moved people profoundly in ways that possibly could not have been predicted at the start of 2020, and the pandemic continues to shape our everyday lives, from where we work every day, to where our children go to school, and even what we eat and drink. We've seen an uptick in functional foods for health, and growth in dairy for breakfasts at home. Because of Covid-19, our favourite coffee shops were closed, so our grab it and go cuppa had to be made at home. We became our own baristas. Restaurant tables moved to the kitchen, and so did the office and school desks. Here we sit, for us in the UK a year later, moving slowly out of our third (and hopefully final) lockdown. More of us are getting vaccinations, and we are all ever so carefully looking towards the future, when perhaps the corona-virus will be not gone, but at least controlled.
