Las Vegas in July? Hard to believe, but yes, that is where you need to be if you want to remain competitive in the food processing industry. The Las Vegas Convention Center will be the scene of the 2004 Institute of Food Technologists Annual Meeting and IFT Food Expo (IFT), which runs July 12-16. Attendees will learn the latest innovations and information affecting consumers, growers, processors, regulators and researchers who help make the U.S. food supply the most diverse of any in the world. All of that will be transpiring in the city that never sleeps. The 2004 show format is different than that of previous years, as this year's IFT runs during the week (previous shows included a weekend, typically starting on a Saturday). This gives attendees the opportunity to arrive in Las Vegas on Monday or Tuesday, depart on Friday, and have either weekend to yourself — at home or in the gambling town.
