The effect of the water-soluble fraction of clove (Eugenia caryoplyllata) on the enzyme activities of Leuconostoc mesenteroides B-512FM dextransucrase that synthesizes 5% α-1→3 branched dextran, Streptococcus mutans 6715 GTF-I mutansucrase that synthesizes water-insoluble mutan (α-1→3 glucan) and GTF-S dextransucrase that synthesizes water-soluble dextran that has 36% α-1→3 linked branches has been studied. The extract was found to be a noncompetitive inhibitor for the synthesis of B-512F(M) dextran, an uncompetitive inhibitor for the synthesis of GTF-I mutan, and an activator for the synthesis of GTF-S dextran. We postulate that the water-soluble constituent(s) of clove have potential application in the inhibition of dental plaque formation.
