As previously highlighted in C&CI, hermetic storage techniques have been used to store cocoa for a number of years. However, they are increasingly also being used for intercontinental shipment of cocoa, in origins as diverse as Indonesia, Cote d'lvoire, Ghana and Brazil, and for the transportation of coffee. The primary problems facing cocoa, both in storage and in shipment, are insect infestation and damage; the growth of moulds: an increase in Free Fatty Acids (FFAs), which can cause cocoa to become rancid, destroying the quality of the beans; and environmental problems due to chemical usage and growing insect tolerance to fumigants.
