You know that old joke: what's ayoung hen's first egg? (Answer: a pullet's surprise.) Bad play on good journalism. What reminded me of the j oke was the time I spent with a veteran egg farmer from the upper Midwest region. He recounted his early dayswhen he decided to turn organic with his chicken operation. He said it just felt right, but all his friends and competitors laughed at him—and actually ridiculed and ostracized (no, he didn't raise ostriches) him and his family. Fortunately, he could tell the story with a certain sense of comfort despite those painful times. He was one of the early farmer-members of Organic Valley, and he has made a fair living from his farming ever since. He speaks of the reusable flats to transport the eggs in bulk to the packer, and also of the positive environmental impact of local systems. While his speaking is modest and terse, he still feels sad for the egg farmers who have not converted to organic who are suffering from the downward spiraling pressure of market price. That he converted his long-standing family farm to organic against the grain of the time is testament to the fierce and ethical individuality that is the backbone of the organic movement Thank heavens conscious consumers now recognize the valueof certified organic food and are willing to pay for it Bless the power of purchasing.
