The Red River Valley (Northern Plains) potato production areas of North Dakota and Minnesota and the Central Sands of Minnesota produce beautiful red and yellow skinned potatoes for the fresh table-stock market.Additionally, certified seed growers also produce these cultivars for sale to fresh market growers who produce in southern states during the winter and spring. About 26% of US production is for tablestock, primarily red skinned-white fleshed and a few yellow skinned-yellow fleshed cultivars. Red and Dark Red Norland selections, Red LaSoda, Sangre, and Yukon Gold, amongst others are predominant. These cultivars have weaknesses, including the lack of uniform red color for the Norland selections, at timesdeep eyes for Red LaSoda, the propensity for hollow heart in Yukon Gold, and the patchy russetted skin that often develops on Sangre. Cultivars with uniform bright red skin color that is retained through storage, disease resistance including to 'cosmetic' diseases such as silver scurf and black dot, glossy skin finish, and high yield potential using minimal inputs, are traits desired by the fresh industry.
