During the period from September 1996 to February 1998, a survey was carried out in four broiler farms to introduce HACCP system. Upon observation of the farms, several problems were pointed out on farm facilities and ordinary hygiene management. Bacteriologically, 287 specimens such as cloacal swabs and environmental samples for Salmonella and 131 cloacal swabs for Campylobacter were taken from the farms at different stages. Salmonella was more frequently isolated from the dust samples (13.8%) and the floor samples (12.9%), however, Campylobacter was only isolated from the cloacal swabs at the time of shipping (36.4%). These Salmonella isolates were serologically identified as S. Enteritidis, S. Montevideo, S. Fyris and S. Infantis. According to the above results, hazard distinctive factors were considered and a hygiene management plan applying HACCP system was tentatively designed.
