The triclinic polymorphic behavior of 1,3-dipalmitoyl, 2-oleoyl glycerol (POP), 1-palmitoyl, 2-oleoyl, 3-stearoyl glycerol (POS), and 1,3-stearoyl-2-oleoyl glycerol (SOS) were studied by X-ray diffraction and differential scanning calorimetry and compared to that of cocoa butter. Two triclinic polymorphs were isolated and identified in POP, three triclinic polymorphs in POS, and two triclinic polymorphs in SOS. SAXS and WAXS patterns of the beta(3) and beta(1) crystal polymorphs of POS were identical to those of crystal forms V and VI in cocoa butter. None of the individual triclinic forms of SOS and POP resembled those of CB. In this study, we show that the polymorphic transformation of POS from beta(3) to beta(1) was correlated with the polymorphic transformation from form V to VI in CB, the solid-state transition from the desirable cocoa butter crystal in chocolate to one associated with the "blooming" quality defect.
