Sweet potato (Ipomoea batatas Lam.) is one of the important human foods and is very rich in carbohydrate and especially liked by the poors. This is also recognized as the most efficient converter of the solar energy. Approximately 80% of the world sweet potato is grown in Asia. In India, it is grown over an area of 0.14 million hectare, with an annual production of 1.17 million tonnes of raw tubers. However, its productivity is only 8 tonnes/ hectare as compared to 15-18 tonnes/ hectare in China andJapan (Anon., 2005). In Uttar Pradesh, Etah, Badaun, Farukhabad and Sultanpur are the major sweet potato growing districts.
