摘要

Fouling of thermal processing equipment by dairy fluids is considered to be a serious problem. Application of a micromanipulation technique for direct measurement of the adhesive strength of whey protein deposits on a stainless steel surface is described. Results might provide useful information on the optimal removal of milk-based deposits for cleaning of fouled surfaces of plate heat exchangers used in the dairy industry. The proposed technique utilised a T-shaped probe to pull fouling deposits away from the stainless steel surfaces to which they were attached, with simultaneous determination of the force imposed on the probe to achieve deposit removal. The apparent adhesive strength between fouling deposits and surfaces was determined. Measured values of apparent cohesive/adhesive strength were seen to be a function of temperature, cleaning agent concentration and exposure time. The adhesive strength of whey protein deposits was greater than the cohesive strength at room temperature.
