An increase of E. coli O157:H7 in industry and government testing, coupled with the recent spate of outbreaks and recalls, has everyone scratching their heads about the potential causes - and at least two possibilities are making the rounds. One is that the drought and heat conditions this year may have further exacerbated the problem in cattle, who under normal summer conditions produce a heavier load of the bacteria. "I've heard that mentioned by some," said Randy Huffman, vice president of scientific affairs for the American Meat Institute Foundation. "However, I don't know that the data are strong enough to know why and how that [drought] would result in an increase of E. coli O157:H7 in cattle. Various research projects have identified both dry and wet conditions as potential contributors. "
