A fter 90 years of "touch and smell" meat inspection, USDA's Food Safety and Inspection Service (FSIS) has released a new science-based rule to modernize the system. The rule mandates the nation's packers/processors adopt plans to prevent food contamination. For pork producers that will likely mean voluntary certification that hogs are free of drug residues. Final comments were due the end of July; FSIS refused to grant an extension to the 60-day comment period.
