The Role of Nutrition on the Epithelium of Oral Mucous Membranes

This contract was aimed at studying the separate effects of protein-calorie malnutrition and vitamin C deficiency on oral and para-oral tissus in the non-human primate. With the dietary regiment employed, the author was able to develop a highly reliable animal model for the study of the effects of mild to moderate protein-calorie malnutrition (PCM). Of the biochemical indices, alterations in serum total protein and transferring and the valine/glycine and Whitehead ratios occurred early in the onset of this degree of PCM. Further in mild to moderate PCM, quantitative changes were noted in the composition of saliva. In contrast, the oral epithelium was resistant to change. It is suggested that the present animal model might be useful in elucidating the modulating influence of PCM on the etiology of dental caries. Studies on vitamin C deficiency revealed that defects in the permeability barrier of the gingival sulular epithelium and leukocyte phagocytic activity may play a role in the pathogenesis of scorbutic gingivitis. Further, it is clear that the periodontal tissues are prone to inflammation in chronic sub-clinical ascorbic acid deficiency and that this increased susceptibility may be due to defects in leukocyte chemotactic and phagocytic activity.
