Different wheat varieties were used to study the mechanical damage characterization of wheat starch granules.The relationship of wheat kernel parameters with the damage of starch granules (DS),and the damaged starch content with flour properties were analyzed.Then a hard wheat varietie was roller-milled.Starch was prepared from the obtained flour.Mechanical crushing strength controlling to obtain flours and starches with different percentage of the damaged starch content(DS).The main results were shown as follows.%本文以58种小麦为原料,研究淀粉粒机械损伤程度与小麦品种和小麦粉品质之间的关系,后挑选出一种硬质小麦进行制粉,并进行淀粉分离提取,通过控制机械粉碎强度获得损伤淀粉含量不同的小麦粉和淀粉,研究小麦损伤淀粉含量与小麦粉品质及淀粉性质的关系,主要研究结果如下:58种小麦籽粒及其小麦粉品质测定分析,结果表明小麦籽粒特性和小麦粉品质中不完善粒含量变异系数最大为74.2%,小麦粉白度值最小为3.4%;淀粉糊化特性中最低粘度变异系数最大为51.2%,糊化温度最小为5.1%;面团粉质特性稳定时间变异系数最大为78.6%,吸水率最小为8.3%;损伤淀粉含量与小麦籽粒硬度(r=0.435)、溶剂保持能力(r=0.392)、碱水保持能力(r=0.336)、小麦粉吸水率(r=0.447)和形成时间(r=0.417)均呈极显著正相关,与淀粉糊化衰减值(r=-0.323)、面团弱化度(r=-0.268)呈显著负相关.
