Different wheat varieties were used to study the mechanical damage characterization of wheat starch granules.The relationship of wheat kernel parameters with the damage of starch granules (DS),and the damaged starch content with flour properties were analyzed.Then a hard wheat varietie was roller-milled.Starch was prepared from the obtained flour.Mechanical crushing strength controlling to obtain flours and starches with different percentage of the damaged starch content(DS).The main results were shown as follows.
