Breeders at CIMMYT use bread wheat germplasm of diverse origin (Australia, Canada, USA, China, etc.) to develop novel germplasm, which is distributed globally to support local breeding programs in producing wheat varieties for the manufacture of diverse baking products (e. g., flat breads, leavened breads, and steamed breads). Quality characteristics (mixographic properties, dough strength, and dough extensibility) and their relationship with Glu-Dl and Glu-B3 glutenin allelic variants were examinedin genetically diverse populations, which included normal IB/IB and 1B/1R translocation genotypes. The highest frequency of superior quality genotypes corresponded to Canadian wheat, followed by that from USA, Australia and CIMMYT. Chinese germplasm wasgenerally inferior in quality. As expected, the translocated wheat cultivars and those with the HMW-glutenin 2+12 possessed poorer quality compared to those containing IB/IB and the 5+10 subunit, respectively. Glu-B3 LMW subunits d, c, i, and g or f whencombined with GIn-A3d, were associated with stronger dough, while the Glu-B3 subunits f and j produced intermediate to weak dough. Glu-B3 LMW subunits c, d, and f or g when combined with Glu-A3d, were associated with very good extensibility, while limited extensibility was associated with subunit h. Some cultivars carrying the 1B/1R transiocation showed acceptable quality attributes.
