Elemental analysis of salted yoghurt produced from goat milk

Salted yogurt Is known as winter yogurt which is made mainly from goat milk. We have studied gross chemical composition and 13 element contents in 4 salted yogurt samples. The mean values for chemical composition of salted yogurt were: total solids 28.81%; fat 10.50%; crude protein 11.26%; salt 2.51%; ash 2.62% and titratable acidity 2.36%. Ca, Cd, Co, Cr, Cu, Fe, As, Mg, Mn, Mo, P, Pb and Zn elements in salted yogurt were determined. The most abundant elements were Ca, Mg and P, respectively.
