不同挂果期瓜蒌的糖分与质量相关性研究

         

摘要

目的 对不同挂果期栝楼果实加工而成的瓜蒌进行总糖及还原糖的含量测定,并对其与质量的相关性进行研究.方法 采集栝楼同一产地不同挂果期的果实,后熟加工制成瓜蒌.用苯酚-硫酸法测定总糖的含量,用3,5-二硝基水杨酸法(DNS法)测定还原糖含量.结果 5、6、7、8月挂果制成的瓜蒌中总糖含量依次为33.01%、31.98%、31.28%、28.50%,还原糖含量依次为9.28%、8.38%、8.10%、6.37%;这些含量的高低与瓜蒌外观品质相一致.结论 5~7月挂果制成的瓜蒌糖分足、质量佳.总糖或还原糖的含量与瓜蒌的质量具有正相关性.%Objective To establish a method for the determination of total sugar and reducing sugar in Trichosanthis Fructus with different fruit bearing periods and to evaluate the correlation between sugar and quality of Trichosanthis Fructus. Methods Trichosanthis Fructus with different fruit bearing periods were collected from the same origin. Phenol-sulfuric acid method and 3,5-dinitrosalicylic acid (DNS) method were used to obtain the contents of total sugar and reducing sugar, respectively. Results The contents of total sugar with different fruit bearing periods (May, June, July, and August) were 33.01%, 31.98%, 31.28%, and 28.50%, respectively. The corresponding contents of reducing sugar were 9.28%, 8.38%, 8.10%, and 6.37%, respectively. The concentration of sugar in Trichosanthis Fructus showed a high correlation with their visual inspection of Trichosanthis Fructus. Conclusion Trichosanthis Fructus with the fruit bearing periods from May to July have high sugar content and good quality. The contents of total sugar and reducing sugar were positively correlated to the quality of Trichosanthis Fructus.
