So you think the potato is just a lowly brown lump? A tiresome tuber? It's actually one of the best bets for your vegetable patch: each small potato you plant in spring will happily give you five to ten potatoes in return by August or September. Andthink of the variety you can grow: you don't have to settle for plain brown skins and white flesh. In the market places of Peru, the potato's birthplace, farmers offer tubers of every size, shape and colour imaginable. In Canada, the flesh colours rangefrom purest white in 'Caribe' and cream in 'Russet Burbank' to pale yellow in 'Yukon Gold' and shocking purple in 'All Blue'. There must be a potato for even- taste. For baked potatoes try 'Russet Burbank' or 'Butte'. 'Yukon Gold' is my favourite for mashed potatoes. 'Chieftan' is great boilecl. And some swear 'Banana' is the best for potato salad.
