A study was conducted in Tuscany, Italy during 2001 to investigate the differences in oil qualitative characters among 15-year-old olive plants (cv. Leccino) grown under irrigated and dry-farm conditions. Fruits were harvested during the full pigmentation of the epicarp or at green-black skin colour. Free acidity, peroxide number, K232, K270 and fatty acid composition were measured through SPME-GC-MS, while phenolic compounds were colorimetrically assessed. Irrigation did not affect free acidity, peroxide number and fatty acid composition of the oil. Oil obtained from black fruits of irrigated plants was more pungent and bitter than that from dry-farmed trees, probably due to low polyphenol content in irrigated trees. Oil harvested from green fruits from irrigated trees was more floral and fruity than from dry-farmed trees. In dry-farmed trees, pungency and bitterness were greater in fruits harvested during the black skin stage than those harvested during the green stage.
