    • 摘要: 为改善鸡肉丸的保水性,探讨不同磷酸酯淀粉添加量对鸡肉丸品质的影响。通过测定不同磷酸酯淀粉添加量对鸡肉丸蒸煮损失、质构、剪切力、色泽和感官评定等的影响,以获得最佳配方。结果表明:增加磷酸酯淀粉的添加量显著提高(p<0.05)鸡肉丸的硬度、弹性、咀嚼性和剪切力,降低蒸煮损失、L*和a*值,但添加5%和7.5%磷酸酯淀粉鸡肉丸的弹性和L*值差异不显著。在相同添加量下,添加5%玉米淀粉鸡肉丸的保水性、质构特性和感官品质显著低于(p<0.05)添加5%磷酸酯淀粉的鸡肉丸。结合机械测定和感官评定结果可知,添加5%磷酸酯淀粉能够改善鸡肉丸的保水性和结构,提高感官品质。

    • 摘要: 将磷酸酯淀粉与PVA通过溶液共混的方法来制备共混膜,讨论了磷酸酯化的改性程度、增塑剂丙三醇和交联剂戊二醛的用量对共混膜力学性能和透光率的影响.结果 表明,当磷酸酯淀粉取代度提高时,断裂伸长率和透光率增大,断裂强度先增加后降低;共混膜的断裂伸长率随丙三醇含量的增加而显著增加,而断裂强度和透光率呈现先增加后减少的趋势.当交联剂戊二醛的质量分数为4.5%时,共混膜的断裂伸长率,断裂强度和透光率达到了最大值.

    • 摘要: 以十二胺为捕收剂浮选赤铁矿和石英单矿物时,木薯原淀粉作为抑制剂选择性较差,而磷酸酯淀粉表现出较好的选择性.采用石英晶体微天平(QCM-D)测定了两种抑制剂溶液分别在Fe2O3镀层和SiO2镀层的石英晶体谐振器表面的吸附全过程,两种抑制剂在Fe2O3表面的吸附作用快、吸附紧密、吸附层质量较高、且吸附不可逆;两种抑制剂在SiO2表面的吸附层质量较低、且吸附可逆,同时吸附速度有显著差别,木薯淀粉的吸附速度快、而磷酸酯淀粉的吸附速度较慢.

    • 摘要: 本文研究了淀粉磷酸酯化的反应动力学过程,讨论了复合磷酸盐配比、复合磷酸盐用量等反应条件对取代度的影响,不同反应温度对淀粉磷酸酯化反应速率的影响.结果表明,提高反应温度,反应速率明显加快,淀粉磷酸酯化反应符合二级动力学的反应机理,磷酸酯化反应的表观活化能Ea=14.6 kJ·mol-1.

    • 摘要: 以玉米淀粉为原料,三聚磷酸钠为酯化剂,尿素为催化剂,采用半干法制备磷酸酯淀粉,并考察酯化剂、催化剂用量、pH、反应温度和反应时间对磷酸酯淀粉取代度和黏度的影响.结果表明,制备磷酸酯淀粉的最佳工艺条件为:三聚磷酸钠用量6.0%、尿素用量5.0%、pH8.0、反应温度135°C、反应时间2.0 h.此条件制备的磷酸酯淀粉糊化温度为55.4°C,峰值黏度可达2084 BU,取代度可达0.0201%,其糊化性能远高于玉米淀粉,大大提高其在食品及造纸等领域的应用范围.%Taking corn starch as a raw material,sodium tripolyphosphate as an esterifying reagent,urea as an catalyst,phosphate starch was synthesized by a half-dryprocess.The effects of the amounts of sterifying reagent and catalyst,pH,reaction temperature and time on combined degree of substitution and viscosity were investigated.The results indicated that the best reaction conditions were:amounts of tripolyphosphate and urea was 6.0% and 5.0%,pH8.0,reaction temperature 135 °C,reaction time 2.0 hours.Under these conditions,the gelatinization temperature was 55.4 °C,the peak viscosity was 2084 BU,the degree of substitution was 0.0201%.The Pasting property was higher than corn starch.It could greatly improve its application in food and paper industry.

    • 摘要: 以油酸钠为捕收剂,以木薯原淀粉、取代度为0.026和0.21的羧甲基淀粉、取代度为0.0065和0 055的磷酸酯淀粉作为抑制剂,考察了赤铁矿和石英的可浮性重点研究了变性淀粉基团取代度对其抑制性能的影响浮选试验结果表明,原淀粉与变性淀粉对赤铁矿的抑制作用规律一致,提高变性淀粉的取代度可增强其对赤铁矿的抑制能力;对于Ca2+活化的石英,在较低的Ca2+用量时,原淀粉和变性淀粉均没有明显的抑制作用,但是随着Ca2+用量的增加,变性淀粉表现出一定的抑制作用、且取代度越高越显著.这种抑制作用与油酸钠、Ca2+及变性淀粉三者的用量有关.Ca2+以Ca(OH)+的形式吸附于石英表面,油酸钠或变性淀粉再与Ca(OH)+作用,如果油酸钠用量较大,全部Ca( OH)+优先与油酸钠作用,则石英被捕收;如果油酸钠用量相对较小,变性淀粉与剩余的Ca(OH)+作用,则对石英产生抑制作用 控制Ca2+和油酸钠的用量在最佳范围,增加变性淀粉的取代度可提高其在赤铁矿脱硅反浮选中的抑制性能.%Using sodium oleate as collector and cassava starch,carboxymethyl starch with degree of substitution of 0.026 and 0.21,and phosphate ester starch with degree of substitution of 0.0065 and 0.055 as depressant,the floatability of hematite and quartz were investigated,and the effect of degree of substitution of modified starches on capability of depression was mainly studied.Results of flotation tests show that the depressing effect of modified starches on hematite is similar with that of native starch,and the higher the degree of substitution of the modified starches,the stronger the depression capability.For quartz activated by Ca2+,both native starch and modified starches have no obvious depression at lower Ca2+ dosage,but with the increase of Ca2+ dosage,modified starches show a certain depression which increase with the degree of substitution.The depression was related to the dosages of the three reagents viz.sodium oleate,Ca2+,and modified starches.Ca2+ was adsorbed on the surface of quartz in the form of Ca (OH) +,then sodium oleate or modified starches reacted with Ca(OH) + If the dosage of sodium oleate is enough to react with all Ca(OH) +,quartz would be collected.If the dosage of sodium oleate is relatively small,quartz would be depressed by modified starches which reacted with the other Ca(OH) +.If sodium oleate and Ca2 + are added in optimum dosage range,with the increase of the degree of substitution modified starches would have more effective depression in reverse flotation of removal quartz from hematite.

    • 摘要: 以玉米淀粉为原料,采用挤压膨化法制备磷酸酯淀粉,以取代度(DS)为指标,研究各反应因素对产品DS的影响,并通过正交试验确定了其最佳工艺条件.通过傅里叶变换红外光谱(FT-IR)、核磁共振波谱(NMR)、扫描电子显微镜(SEM)、比表面积分析(BET),对制备的挤压膨化磷酸酯淀粉进行了结构表征.将不同DS的挤压膨化磷酸酯淀粉添加到卷烟滤嘴中,考察了DS对主流烟气中氨释放量的影响.结果表明:①制备挤压膨化磷酸酯淀粉的最佳工艺条件为反应温度120°C,样品水分含量24%,螺杆转速120 r/min,磷酸盐添加量9%;②挤压膨化磷酸酯淀粉对主流烟气中氨释放量有明显的降低作用;⑨随着DS的增加,氨释放量减少,氨释放量降低率可达32.44%,选择性降低率为21.69%.%Phosphorylated starch was produced from corn starch using an extrusion process.The extrusion variables were studied on the degree of substitution (DS).The optimized conditions of preparing phosphorylated starch were determined based on orthogonal experiment.The structure of resulting phosphorylated starch was characterized by Fourier-transform infrared spectra (FT-IR),Nuclear magnetic resonance (NMR),Scanning electron microscopy (SEM) and surface area analysis (BET).The phosphorylated starch was tested as a stabilizing additive in cigarette filter,with respect to the influence of DS on ammonia delivery of mainstream cigarette smoke.Results showed that:1) Optimum conditions obtained at 120 °C,24% moisture content,120 rpm screwing speed,9% phosphate content;2) Phosphorylated starch can greatly reduce ammonia from mainstream cigarette smoke.3) Increasing DS,Ammonia emission was reduced by as much as 32.44% and the selective reduction rate was about 21.69%.

    • 摘要: 以马铃薯淀粉为原料,三氯氧磷为酯化剂制备磷酸酯淀粉.然后把磷酸酯淀粉作为增稠稳定剂,以酸奶的酸度、持水力和感官评定为指标,通过一系列单因素实验和正交实验确定了生产该种酸奶的最佳配方:发酵温度43°C,磷酸酯淀粉添加量0.4%,蔗糖添加量7%,发酵时间4h.制备的磷酸酯淀粉作为增稠稳定剂可以提高酸奶品质.%Potato starch was used as the raw material,and the phosphate starch was prepared by phosphorus oxychloride.Then the starch phosphate ester as the thickening agent,the acidity of yogurt,water holding capacity and sensory evaluation index,through a series of single factor expetiment and orthogonal experiment,the best formula of producing this kind of yoghurt was determined:temperature 43 °C,the starch phosphate ester 0.4%,sucrose 8%,fermentation time 4 h.The preparation of phosphate starch as thickening stabilizer can improve the quality of yogurt.

    • 摘要: 以十二胺为捕收剂,木薯原淀粉、取代度为0.026和0.21的羧甲基淀粉和取代度为0.0065和0.055的磷酸酯淀粉作为抑制剂,考察了赤铁矿与石英的可浮性,重点研究了基团取代度对变性淀粉抑制性能的影响.结果表明:原淀粉、取代度0.026的羧甲基淀粉和取代度0.0065的磷酸酯淀粉对赤铁矿有良好的抑制作用,而取代度0.21的羧甲基淀粉和取代度0.055的磷酸酯淀粉对赤铁矿的抑制能力较弱;原淀粉和取代度0.026的羧甲基淀粉对石英有较强抑制作用,其他3种淀粉对石英抑制能力较弱.可见,低取代度的磷酸酯淀粉,在赤铁矿阳离子反浮选脱硅中可作为较高选择性的抑制剂.Zeta电位测定结果表明,特征基团取代度相对较高的变性淀粉,与赤铁矿和石英作用后,矿物Zeta电位负值较大.变性淀粉的取代度越高,其伸展向溶液中荷负电的基团越多,使阳离子捕收剂通过静电作用吸附于矿物表面,减弱了变性淀粉的抑制能力.%The floatability of hematite and quartz were investigated using dodecylamine as collector and cassava starch, carboxym-ethyl starches with degree of substitution (DS) of 0. 026 and 0. 21, and phosphate ester starches with DS of 0. 0065 and 0. 055 as de-pressants. The effect of DS on the depressing behavior of modified starches was studied. The flotation results show that native starch, carboxymethyl starch with DS of 0. 026, and phosphate ester starch with DS of 0. 0065 can strongly depress hematite, whereas carboxy-methyl starch with DS of 0. 21 and phosphate ester starch with DS of 0. 055 weakly depress it. The native starch and carboxymethyl starch with DS of 0. 026 can strongly depress quartz, whereas the other three starches are investigated possessed less depressing capa-bilities for quartz. The results reveal that a low-DS phosphate ester starch is a highly selective depressant in the reverse flotation of sili-ca-containing iron ore with cationic collectors. The Zeta potential measurements exhibit that modified starches with higher DS can lead to lower Zeta potentials of minerals. Thus, the weakened depressing capabilities of modified starches might adsorb cationic collectors on the mineral surface via electrostatic attraction with negatively charged groups stretching into the solution.
