Collagen is a high potential usable substance in the by-products of livestock and poultry and aquatic products.Make a good use of collagen in the by-products of livestock and poultry and aquatic products,it will not only reduce the costs of livestock and poultry and aquatic product production,but also decrease the environmental pollution.With the continuous proceeding of green development conception in China,more and more green producing technologies will be widely adopted.Biological enzymolysis technology is characterized with its low pollution and high efficiency,it has attracted much attention since it was first used in the processing of by-products of livestock and poultry and aquatic products.In order to further promote the application of enzymolysis technology in the processing of collagen in the by-products of livestock and poultry and aquatic products,and to further explore the function of peptides produced from collagen by enzymatic hydrolysis,research progress on preparation process of peptide from collagen by proteinase hydrolysis is reviewed.Through comparison of the research progress on collagen hydrolysis,it is found that the single enzyme hydrolysis is the main method used in the hydrolysis of collagen,followed by multi-enzyme hydrolysis.In raw materials,the frequently used by-products are bone,scale and skin.In hydrolysis effect evaluation,the degree of hydrolysis is mainly adopted,followed by free radical inhibition ratio,peptide extraction ratio and ACE inhibitory activity.%胶原蛋白是畜禽及水产品加工副产物中具有较高潜在利用价值的物质,将其高效利用,不仅有利于降低畜禽及水产品生产成本,而且有利于减少环境污染.随着我国绿色发展理念的不断推进,更多绿色制造技术将被广泛应用.生物酶解技术以其高效、低污染等特点,在畜禽及水产品加工副产物利用方面应用之初就备受广泛关注.为了进一步促进酶解技术在畜禽及水产品加工副产物中胶原蛋白水解工艺探索,并进一步发掘酶解胶原肽的功能性,文章对近年来国内外关于酶解胶原制备肽的研究进展进行了综合分析.通过分析发现,在胶原酶解工艺方面,主要以单酶水解居多,其次是多酶水解技术.在原料方面,涉及更多的是骨、鳞及皮.在产物评价方法,更多的是采用水解度、自由基抑制率及肽的提取率、ACE抑制活性.
