The role of fish lipids in nutrition has been emphasised in recent years as a result of its beneficial effects in cardiovascular diseases due to the presence of high percentage of omega 3 (omega 3) polyunsaturated fatty acids. The presence of such fatty acids in sardine oil suggests its utilisation as a dietetic supplement. On the other hand, it has been reported that diets supplemented with polyunsaturated fatty acids influence in different ways the triglycerides and cholesterol serum levels, both in humans and in laboratory animals.
