In this research, the content of sulfur dioxide (SO2) in fresh and dried L. edodes fruiting bodies from the major producing and trading areas of Zhejiang province was determined. Pollution intensity was assessed based on single-factor and multi-factor pollution indices. The results showed that SO2was detected in all analyzed fresh and dried fruiting bodies of L. edodes, with measured values ranging from 1-41.5 and 1-305 mg/kg respectively. Our analysis showed that the average SO2 concentration,n fresh and dried L. edodes were 2. 38% and 25.4% respectively above the safety standard, and the total variation coefficient were 105% and 146%. In addition, the background values of SO2in fresh and dried L. edodes were 1. 295-28. 121 mg/kg and 0. 640 -562.792 mg/kg respectively, following lognormal distribution, thus the background value should take the geometric averages, namely 6. 035, 18. 984 mg/kg. As concluded in pollution evaluation, the fresh L. edodes was overall not contaminated with pollution index 0. 144, and dried L. edodes was slightly contaminated with pollution index 1.257 by single-factor pollution index. Multifactor pollution index further confirmed that the dried L. edodes were slightly contaminated (pollution index, 1.091).
